With the change of season from summer to autumn, while the days start getting cooler and the countryside starts turning into patches of green, one of the Maltese Islands’ loved vegetable, the pumpkin, returns.
The scooped-out sweet and tender pumpkin meat can be turned in several dishes, from soups a favourite winter staple, to pasta and rice dishes and even preserved into jams.
One great way of preserving pumpkins is that of preparing jams. At The Cliffs, yearly we produce batches of the Pumpkin and Maltese Orange Jam, combining the sweet taste of the pumpkin with the citrusy zest of the orange.
The bright orange colour of the pumpkin acts as a good reminder to the autumn season, whilst the addition of the oranges adds a tangy flavour which balances out the sweetness.
