Wild Edibles
Wild edible plants have always been important in the folk traditions of the Mediterranean. The habit of using wild edibles and local produce for culinary purposes is alive in the local rural village of Dingli, but at a disappearing rate. Recording, preserving and instilling traditional and inherited knowledge of the use of local produce is crucial. Most food served at The Cliffs is local with traditional aspects that have been either lost or in the verge of being lost, complementing our motto “A new concept…local produce”.
We have found a way of incorporating wild edibles in the seasonal gastronomical practices. Through our daily culinary practices, we aim to notify the public that in the Maltese Islands alone, we have over 1100 species of wild plants. We also strive to revive past traditions such as the use of local wild and semi-wild fruits.

Local Products
We give first preference to agricultural products available in the area according to the season and we also produce a wide range of local organic product including jams, marmalades, olive oil, savoury delicatessen, dried herbs and more.
The Herbs and Spices available are hand-harvested and packed from foraged plants and are produced in small quantities. Historical, cultural and local aspects have been considered in the selection of sweet produce such as jams, marmalades and preserves and Savoury produce.
The Extra Virgin Olive Oil sold at The Cliffs is a tribute to the oldest olive tree that is found at our estate down the cliffs. The olives are hand-picked from family-run groves from Dingli and are pressed exclusively using mechanical means.
